Preparation Steps
- Preheat oven to 350F and prepare a 9x5-inch loaf pan.
- In a large bowl, whisk together egg, oil, sour cream, vanilla, and sugars.
- Add the flour, cinnamon, ginger, baking soda, baking powder, salt; stir until combined but do not overmix.
- Fold in grated apple and zucchini.
- Pour batter into prepared pan, smooth top, and bake for about 50 minutes or until toothpick comes out clean.
- Cool in pan for 30 minutes before removing from pan.
- Meanwhile, prepare the frosting by melting butter, adding brown sugar and milk, bringing to a boil, then removing from heat and mixing in vanilla, salt, and confectioners' sugar until smooth.
- Spread frosting over cooled bread and let set before slicing.

For extra flavor, add chopped nuts or dried fruits if desired.
