  • 0.25 cup olive oil
  • 1 Tbsp lemon zest
  • 5 cloves garlic (minced)
  • 4 tsp Italian seasoning
  • 2 tsp paprika
  • kosher salt and freshly ground black pepper

Preparation Steps
  1. Preheat the oven to 400°F and position the oven rack one level above the center.
  2. Line a baking sheet with aluminum foil and place an oven-safe wire rack on top; spray with non-stick spray.
  3. In a large bowl, whisk together olive oil, lemon zest, garlic, Italian seasoning, and paprika.
  4. Pat dry chicken thighs with paper towels, then toss in the bowl with herb mixture to coat evenly.
  5. Arrange the chicken thighs on the wire rack, skin side down. Season with salt and pepper, then flip skin side up and season again.
  6. Bake for 35-45 minutes until skin is crispy and internal temperature reaches 175°F.
  7. Serve hot with lemon wedges and optional chopped parsley for garnish.

Notes

For extra crispy skin, broil the chicken for the last 2 minutes if desired.
