- Preheat the oven to 425°F. Poke each potato with a fork a few times. Rub potatoes with olive oil and season with salt and black pepper.
- Place potatoes on a baking sheet and bake for 60 minutes or until tender.
- Slice open each potato and fluff the insides with a fork. Mix the potato flesh with shredded cheese, garlic powder, and chopped parsley.
- Stuff the cheese mixture back into the potato skins. Return to the oven for an additional 10 minutes until cheese is melted.
- Serve hot, garnished with extra parsley if desired.
