  • 0.33 cup balsamic vinegar
  • 0.25 cup olive oil
  • 1 Tbsp minced garlic (3 cloves)
  • 2 tsp minced fresh rosemary (or 3/4 tsp dried)
  • 2 tsp minced fresh thyme (or 3/4 tsp dried)
  • 2 tsp dijon mustard
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 lbs boneless skinless chicken thighs
  • 1 Tbsp chopped fresh parsley (optional)

Method
 

Preparation Steps
  1. Place chicken in a gallon size resealable bag or a bowl.
  2. In a mixing bowl, whisk together balsamic vinegar, olive oil, garlic, rosemary, thyme, dijon mustard, salt, and pepper.
  3. Pour marinade over chicken in the bag or bowl. Seal and refrigerate for at least 2 hours, up to 24 hours.
  4. Preheat grill to medium-high heat (about 400°F). Oil the grates.
  5. Remove chicken from marinade, shaking off excess. Grill chicken for 5-8 minutes per side, until internal temperature reaches 165°F.
  6. Garnish with chopped parsley if desired. Serve warm.
