  • 0.75 cup all-purpose flour
  • 0.75 cup white whole wheat flour
  • 0.5 cup light brown sugar
  • 1 tsp baking soda
  • 1 cup mashed bananas (about 2 medium ripe bananas)
  • 2 large large eggs
  • 0.25 cup maple syrup
  • 0.25 cup unsweetened plain almond milk
  • 2 tbsp melted coconut oil

Method
 

Preparation Steps
  1. Preheat oven to 350ºF. Line a muffin tin with liners or spray with nonstick spray.
  2. Mash approximately 2 medium bananas in a large bowl. Add eggs, maple syrup, and almond milk, then whisk until combined.
  3. Add all dry ingredients and mix well.
  4. Pour melted coconut oil into the batter and stir to combine.
  5. Divide batter evenly into 12 muffin cups, filling about 2/3 full.
  6. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool in the tin for 10 minutes, then transfer to a cooling rack to cool completely.

Store in an airtight container for up to 3 days or freeze for longer storage.
