Preparation Steps
- Peel the bananas and cut them in half lengthwise, then in half again to make four quarters. Insert a popsicle stick into each banana quarter and place them on a parchment-lined baking sheet. Freeze for at least 2 hours.
- Melt the white chocolate in the microwave in 30-second intervals, stirring until smooth.
- Dip each frozen banana quarter into the melted chocolate, ensuring it is coated evenly. Return to the parchment-lined sheet.
- Place chocolate chips on the coated bananas to create eyes while the chocolate is still soft.
- Return the banana pops to the freezer until the chocolate is set, about 30 minutes. Serve immediately or store in an airtight container in the freezer.
Notes
For a richer flavor, try adding a dash of vanilla extract to the melted chocolate or drizzle with additional melted chocolate for decoration.
