  • 3 cups bowtie pasta (uncooked)
  • 8 slices bacon (cooked until crisp and chopped)
  • 1 pint cherry tomatoes (halved)
  • 2 cups chopped Boston lettuce
  • 0.25 cup red onion (finely chopped)
For the Dressing
  • 0.75 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • salt and pepper (to taste)

Method
 

Preparation Steps
  1. Cook the pasta according to package directions. Drain and rinse under cold water to stop the cooking process. Set aside to cool.
  2. In a large bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, salt, and pepper.
  3. Add the cooled pasta to the bowl along with the bacon, tomatoes, lettuce, and red onion. Gently toss to coat everything in the dressing.
  4. Chill in the fridge until ready to serve. For best flavor, allow it to chill for at least 30 minutes.

This BLT pasta salad is a perfect side dish for summer BBQs, potlucks, or a light lunch. It's best served chilled.
