  • 1 small onion
  • 1 tablespoons olive oil
  • 1 small Hass avocado sliced
  • 4 large eggs
  • 2 cups cooked brown rice
  • 0.25 cup chopped pecans

Preparation Steps
  1. Preheat oven to 400 degrees F.
  2. Toss broccoli, squash, and sliced onion with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until tender.
  3. While vegetables are roasting, heat a skillet over medium-low heat and cook eggs to desired doneness.
  4. Divide cooked rice among bowls. Top with roasted vegetables, sliced avocado, fried eggs, and pecans.
  5. Serve immediately, garnished with additional toppings if desired.
