Preparation Steps
- In a slow cooker, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough). Cover and cook on high for 4 hours.
- Remove the chicken from the slow cooker, reserve 1/2 cup broth, discard the rest. Shred the chicken with two forks and return it to the slow cooker with the reserved broth and hot sauce. Cook on high for an additional 30 minutes to combine flavors.
- To assemble, spoon 1/2 cup of buffalo chicken into each lettuce leaf. Top with shredded carrots, celery sticks, and your favorite dressing. Wrap and serve.
Notes
Serve immediately for best crispness. You can also prepare the chicken ahead of time and reheat.
