Salad Ingredients
  • 12 oz grilled chicken breast sliced
  • 1 cup diced avocado
  • 1 cup diced mango from 1.5 mangos
  • 2 tbsp diced red onion
  • 6 cups baby red butter lettuce
Vinaigrette Ingredients
  • 2 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • salt and fresh cracked pepper to taste

Method
 

Preparation Steps
  1. Whisk vinaigrette ingredients (olive oil, white balsamic vinegar, salt, and pepper) and set aside.
  2. In a large bowl, gently toss together the diced avocado, diced mango, sliced grilled chicken, and diced red onion.
  3. Fill a large salad platter with baby greens or divide them evenly among 4 individual small dishes.
  4. Top the greens with the chicken/avocado/mango mixture and drizzle about half of the prepared dressing on top.
  5. Serve immediately with the remaining dressing on the side, if desired.
