  • 0.75 cup whole wheat flour
  • 1 cup granulated sugar
  • 0.25 cup flakes sweetened coconut
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 2 tablespoons canola oil
  • 2 large eggs
  • 1.5 tsp vanilla extract
  • 2 cups grated carrots (peeled)
  • 20 ounce can crushed pineapple in juice (drained)
  • 0.5 cup chopped walnuts
  • 8 oz Philadelphia Cream Cheese (1/3 fat)
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

Preparation Steps
  1. Preheat oven to 350°F.
  2. In a large bowl, combine flour, sugar, coconut, baking soda, salt, and cinnamon; stir well.
  3. In a medium bowl, whisk together oil, eggs, and vanilla.
  4. Add grated carrots and pineapple; fold gently until combined.
  5. Gradually fold wet ingredients into dry ingredients; batter will be stiff but will come together. Fold in walnuts.
  6. Pour batter into an 8-inch x 3-inch cake pan coated with cooking spray.
  7. Bake at 350°F for 40-50 minutes until a toothpick inserted in the center comes out clean.
  8. Beat cream cheese, powdered sugar, and vanilla until smooth. Spread over cooled cake.
  9. Garnish with remaining walnuts if desired.
