  • 0.5 cup cashews
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon ground ginger
  • 1 clove garlic
  • 1 cup broccoli florets
  • 1 cup red bell peppers
  • 2 tablespoons sesame oil
  • 1 tablespoon olive oil

Preparation Steps
  1. Slice the chicken into 1-inch pieces and toss with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Let sit for 10 minutes.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add sesame oil, garlic, and ginger. Sauté for 1 minute until fragrant.
  4. Add broccoli and red bell peppers, cook for 3-4 minutes until crisp-tender.
  5. Return chicken to the skillet. Mix soy sauce, honey, and rice wine vinegar; pour over the chicken and vegetables. Stir well.
  6. Add cashews and cook for another 2 minutes until heated through. Serve hot.
