Preparation Steps
- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, whisk together flour and baking soda. Set aside.
- In a large mixing bowl, cream butter and sugars on medium-high speed until light and fluffy, about 2 to 3 minutes. Add egg and mix on high speed to combine. Scrape down the sides of the bowl. Add vanilla extract; mix to combine.
- On low speed, add the flour mixture and mix just until combined. Add oatmeal, dried cherries, chocolate chips, and toffee pieces; mix gently to combine. Optional: Chill the dough for 30 minutes for slightly thicker cookies.
- Using a small cookie scoop (or rounded spoonfuls), drop dough onto parchment-lined cookie sheets. Bake for 8 to 10 minutes, or until edges are lightly browned and centers are still soft. (Bake for about 12 minutes if you've chilled your cookie dough.)
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
