Preparation Steps
- Whisk the soy sauce, mirin, honey, ginger, and cornstarch in a small bowl; set aside.
- Lightly season the chicken with salt.
- Heat a large non-stick wok or skillet over medium-high heat. When hot, add 1 teaspoon of the oil, then add the asparagus and cook until tender-crisp, about 6 to 7 minutes.
- Add the garlic and cook until golden, about 1 minute. Set aside on a dish.
- Increase the heat to high, then add 1 teaspoon of oil and half of the chicken. Cook until browned and cooked through, about 4 minutes per side.
- Remove and set aside, then repeat with the remaining oil and chicken.
- Place all ingredients (chicken, asparagus, garlic) back into the wok. Pour the prepared sauce over and cook, stirring, for 30 to 60 seconds until the sauce thickens slightly.
Notes
Serve this delicious stir-fry immediately with your favorite side, such as brown rice or cauliflower rice. For a spicier kick, add a pinch of red pepper flakes with the garlic.
