  • 1 teaspoon ground ginger
  • 3 cloves garlic minced
  • 0.5 teaspoon garam masala
  • 0.25 teaspoon ground turmeric
  • 0.25 cup plain yogurt
  • 1 tablespoon fresh lemon juice
  • salt and freshly ground black pepper to taste
  • 2 tablespoons vegetable oil
  • 3 small yellow onions thinly sliced
  • 0.5 cup raw cashews coarsely chopped
  • 0.25 cup plain yogurt
  • 1 tablespoon vegetable oil
  • 1 tablespoon black peppercorns optional
  • 1 teaspoon ground cardamom
  • 0.5 teaspoon ground cinnamon
  • 2 diced serrano chilis seeded
  • 0.5 cup water
  • 0.5 teaspoon garam masala
  • 0.25 teaspoon salt or to taste
  • 0.25 teaspoon chili powder
  • 0.25 cup heavy cream
  • fresh chopped cilantro for garnish
  • cooked rice for serving

Method
 

Preparation Steps
  1. Marinate the chicken with spices, yogurt, and lemon juice for at least 2 hours.
  2. Cook sliced onions in oil until caramelized, then add cashews and cook briefly.
  3. Blend the onion and cashew mixture with yogurt to form a smooth paste.
  4. Sauté spices and chilis, then add marinated chicken and cook until browned.
  5. Add water and cook covered until chicken is cooked through, about 12-15 minutes.
  6. Stir in heavy cream, simmer for 2 minutes, then garnish with cilantro and serve with rice.
