  • 4 teaspoons Skinny Basil Pesto
  • 1 medium tomatoes sliced thin
  • 6 tablespoons shredded mozzarella cheese
  • 2 teaspoons grated Parmesan cheese

Preparation Steps
  1. Preheat the oven to 400°F. Line a baking sheet with foil or parchment.
  2. Wash chicken and pat dry. Slice each breast horizontally to create 4 thinner cutlets. Season with salt and pepper.
  3. Place chicken on prepared baking sheet. Spread about 1 teaspoon of pesto over each piece.
  4. Bake for 15 minutes or until chicken is cooked through. Remove from oven, top with tomato slices, mozzarella, and Parmesan cheese.
  5. Bake an additional 3-5 minutes until cheese melts and bubbly.
  6. Optional: For grilling, cook chicken over medium heat until cooked through, then top with cheese and toppings, and grill until cheese melts.
