  • 8 oz chicken cutlets
  • 0.5 cup whole wheat Italian seasoned breadcrumbs
  • 0.25 cup grated parmesan cheese
  • 6 tbsp egg whites
  • 5 oz frozen spinach squeezed dry
  • 6 tbsp part skim ricotta cheese
  • 6 oz part skim mozzarella like Polly-O
  • 1 cup pomodoro sauce or your favorite marinara
  • 1 tsp salt
  • 0.5 tsp pepper

Method
 

Preparation Steps
  1. Wash and dry chicken cutlets, season with salt and pepper.
  2. Preheat oven to 450°F. Lightly spray a baking dish with non-stick spray.
  3. Combine breadcrumbs and 2 tbsp grated cheese in one bowl. In another bowl, beat 6 egg whites.
  4. Shred or finely chop mozzarella. Mix with remaining grated cheese, spinach, egg whites, and ricotta.
  5. Lay chicken cutlets on a surface and spread 2 tbsp of spinach-cheese mixture on each. Roll up and keep seam side down.
  6. Dip each chicken roll in egg mixture, then in breadcrumb mixture, and place seam side down in baking dish.
  7. Repeat with remaining chicken. Lightly spray with olive oil. Bake for 25 minutes.
  8. Remove from oven, top with sauce and cheese. Bake until cheese melts, about 3 more minutes.
  9. Serve with additional sauce and grated cheese.
