  • 1.5 pounds skinless chicken breast
  • 1 cup sliced bell peppers
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 2 tablespoons vegetable oil
  • 3 cloves garlic
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons soy sauce

Method
 

Preparation Steps
  1. Slice the chicken into thin strips and season with a pinch of salt.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of oil. Add garlic and ginger, sauté until fragrant, about 1 minute.
  5. Add bell peppers, carrots, and snap peas. Stir-fry vegetables until tender-crisp, about 4-5 minutes.
  6. Return cooked chicken to the skillet. Mix soy sauce and lemon juice, then pour over the stir-fry. Toss to combine.
  7. Cook for an additional 2 minutes to heat through. Serve hot.
