Main Ingredients
  • 6 tablespoons olive oil
  • 2 tablespoons honey
  • 4 cloves garlic
  • 4.5 peppers chipotle peppers in adobo sauce frozen peppers used directly
  • 0.5 teaspoon cumin
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 pounds chicken (breasts, thighs, drumsticks) bone-in or boneless

Method
 

Preparation Steps
  1. Place all ingredients, except chicken, into the blender or small food processor and puree for a few moments. Pour the marinade over chicken in an airtight container or large Ziploc bag and shake to coat each of the pieces.
  2. Place in the refrigerator and turn the chicken (or flip the bag) a couple of times over the next few hours. Let marinate for about 6 hours.
  3. When ready to cook, remove from refrigerator about 30 minutes prior to cooking. Grill or bake until cooked through.
