  • 0.25 cup honey
  • 1 teaspoon vanilla extract
  • 1.33 cups fresh blackberries
  • 3 sheets graham crackers
  • 0.5 teaspoon flaky salt

Method
 

Preparation Steps
  1. Add the cottage cheese, honey, and vanilla extract to a high-speed food processor. Process on high until thick and creamy, about 3-5 minutes.
  2. Add 1 cup of blackberries to the food processor and pulse until just broken up and combined. The cottage cheese will turn a slight purple color.
  3. Pour the mixture into a bowl or loaf pan. Crumble two graham crackers on top and fold into the mixture until combined.
  4. Top the mixture with remaining blackberries and crumbled graham crackers. Optionally, sprinkle with salt.
  5. Cover and freeze for at least 4-6 hours or overnight.
  6. Serve in a dish or on an ice cream cone.
