  • 0.5 cup reduced fat Ritz crackers
  • 1 whole egg
  • 1 egg white beaten
  • 2 finely chopped scallions
  • 2 tablespoons finely chopped red bell pepper
  • 1 tablespoon light mayonnaise
  • 2 tablespoons fresh cilantro
  • 0.5 lime juiced
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon roasted peppers (jarred)
  • 0.25 cup light mayonnaise
  • 1 teaspoon minced canned chipotle in adobo
  • 1 teaspoon fresh lime juice

Method
 

Preparation Steps
  1. In a small blender, puree mayonnaise, lime juice, roasted peppers, and chipotle.
  2. In a large bowl, combine crushed crackers, eggs, scallions, red bell pepper, mayonnaise, cilantro, lime juice, salt, and pepper.
  3. Fold in crab meat carefully, ensuring large chunks remain intact.
  4. Shape mixture into 4 patties using a 1/2 cup measuring cup. Chill for at least 30 minutes.
  5. Preheat oven to 400°F and line a baking sheet with cooking spray.
  6. Bake crab cakes for 8-10 minutes per side until golden brown.
  7. Drizzle with red pepper chipotle lime sauce before serving.
