Preparation Steps
- Cook the bacon: Spread the bacon strips on a baking sheet in a cold oven. Set oven to 400°F and bake for 16-18 minutes until crispy. Remove and drain.
- Prepare the potatoes: While bacon cooks, peel and chop the potatoes into 1/2"-3/4" pieces. Toss in bacon grease, season with salt and pepper, and spread on a baking sheet.
- Bake the potatoes: Roast in the oven at 400°F for 40-45 minutes, stirring halfway through, until golden and crispy.
- Assemble and serve: Crumble the cooked bacon and sprinkle over hot potatoes. Top with shredded cheese and return to oven for 2-3 minutes until cheese melts. Garnish with sliced green onions and serve immediately.
