Sweet Garlic Lime Sauce
  • 3 cloves garlic minced
  • 2 tablespoons rice vinegar
  • 0.25 cup agave or brown sugar
  • 0.25 cup fish sauce
  • 0.33 cup lime juice freshly squeezed
  • 0.33 cup vegetable oil
Bowl Ingredients
  • 7.5 ounces rice noodles vermicelli
  • 0.25 cup fresh basil chopped
  • 0.25 cup fresh mint chopped
  • 0.25 cup fresh cilantro chopped
  • 1 pepper serrano pepper thinly sliced (optional, for heat)
  • 0.5 cup chopped peanuts for garnish
  • 2 avocados sliced or diced
  • 2 carrots julienned
  • 1 red bell pepper sliced into thin strips
  • 1 cucumber julienned
  • 1 pound shrimp, tofu, or chicken cooked, optional

Preparation Steps
  1. For the Sweet Garlic Lime Sauce: Combine garlic, rice vinegar, agave or brown sugar, fish sauce, lime juice, and vegetable oil in a blender or food processor. Pulse until well combined and smooth.
  2. For the Rice Noodles: Soak the rice noodles in cold water for about 30 minutes until softened. Transfer them to a pot of boiling water and cook for just 1-2 minutes. Quickly drain and rinse with cold water to prevent stickiness.
  3. Prepare Vegetables and Herbs: Mince the fresh basil, mint, and cilantro. Thinly slice the serrano pepper (if using). Peel and julienne cut the carrots and cucumber. Slice the red bell pepper into thin strips. Slice or dice the avocados.
  4. Cook Protein (Optional): If adding shrimp, tofu, or chicken, cook it according to your preferred method. For shrimp, quickly sauté until pink. For tofu, pan-fry until golden. For chicken, cook until fully done and slice or shred.
  5. Assemble the Bowls: In large bowls, combine the cooked rice noodles, all the prepared vegetables, fresh herbs, and your cooked protein (if using). Drizzle generously with the Sweet Garlic Lime Sauce. Toss everything together to ensure an even coating. Garnish with chopped peanuts and extra serrano pepper if desired. Serve immediately, warm or cold!

Notes

This recipe is highly customizable! Feel free to add other veggies like shredded cabbage, bell peppers, or bean sprouts. For a vegetarian/vegan option, simply omit the fish sauce (replace with soy sauce or tamari) and use tofu as your protein.
