Preparation Steps
- Preheat oven to 400°F.
- In a large skillet, brown the ground beef and diced onion over medium-high heat until cooked through. Drain excess grease. Stir in salt, pepper, cumin, coriander, chili powder, garlic powder, and smoked paprika. Add beans, corn, enchilada sauce, and tomato sauce. Mix well and heat through.
- Spread 2/3 of the Fritos evenly in the bottom of a 9x13 baking dish. Top with the meat mixture and sprinkle with shredded cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Garnish with remaining Fritos and serve hot. Optional: top with sour cream and guacamole.
