Ingredients

Main Ingredients
  • 1.5 cups puffed rice cereal (like Rice Krispies)
  • 1.5 cups old-fashioned oats
  • 0.75 cup creamy peanut butter
  • 0.5 cup honey
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup mini semi-sweet chocolate chips

Method

Preparation Steps
  1. Line an 8x8-inch baking dish with parchment paper, extending the paper up the sides.
  2. In a large mixing bowl, combine rice cereal and old-fashioned rolled oats. Set aside.
  3. To a small saucepan over medium heat, add peanut butter, honey, and salt. Heat until melted and creamy (about 2-3 minutes).
  4. Remove from heat. Stir in vanilla extract.
  5. Pour over the cereal mixture. Gently fold until evenly coated.
  6. Fold in the mini chocolate chips, reserving a few for the topping.
  7. Add the granola bar mixture to the lined pan. Using a sheet of parchment paper, press the mixture into an even layer. Top with reserved chocolate chips.
  8. Refrigerate for at least 2 hours, or until the bars are set.
  9. When ready, remove the granola from the pan. Slice into 10 bars.
  10. For optimal freshness and shape, store in the refrigerator or freezer.
