  • 4 pieces boneless, skinless chicken breasts (about 6 oz each)
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic glaze
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For the Caprese Topping
  • 8 oz fresh mozzarella cheese sliced
  • 2 large Roma tomatoes sliced
  • 0.25 cup fresh basil leaves chopped

Preparation Steps
  1. Pat the chicken breasts dry with paper towels. In a shallow dish, whisk together the olive oil, balsamic glaze, garlic powder, dried oregano, salt, and black pepper. Add the chicken breasts to the marinade, turning to coat evenly. Let marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator.
  2. Preheat an outdoor grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent sticking.
  3. Place the marinated chicken breasts on the preheated grill. Grill for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) with an instant-read thermometer.
  4. During the last 2-3 minutes of grilling, top each chicken breast with slices of fresh mozzarella and tomato. Close the grill lid to allow the cheese to melt slightly and the tomatoes to warm through.
  5. Remove the grilled chicken from the grill. Garnish generously with fresh chopped basil before serving.

Notes

For an extra touch, drizzle a little more balsamic glaze over the finished chicken. This dish pairs wonderfully with a side salad, roasted vegetables, or a light pasta.
