Preparation Steps
- Preheat the oven to 350°F.
- Prepare an 8-inch square baking dish by lightly spraying with baking spray.
- Line the pan with parchment paper, hanging over the sides to lift out after baking.
- Combine flours, brown sugar, cornstarch, lemon zest, baking powder, and salt in a food processor until well mixed.
- Add cold butter and yogurt, pulse until mixture resembles coarse crumbs. Press into the prepared pan.
- Bake the crust for about 30 minutes or until golden brown. Cool on a rack for 20 minutes.
- Increase oven temperature to 325°F. Whisk eggs, honey, lemon zest, flour, and salt in a bowl.
- Stir in lemon juice, pour over cooled crust.
- Bake for approximately 22 to 25 minutes until set.
- Refrigerate overnight if possible. Slice into 12 squares and dust with powdered sugar before serving.
