  • 2 cups all purpose flour
  • 2 cups sugar
  • 0.75 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 large eggs
  • 0.75 cup milk
  • 0.5 cup vegetable oil
  • 0.5 cup Kahlua
  • 1 tsp vanilla extract
  • 0.75 cup hot coffee
  • 0.125 cup Kahlua
  • 3 tbsp instant espresso powder
  • 1.5 cups unsalted butter room temperature
  • 1.25 cups shortening
  • 10.25 cups powdered sugar
  • 1 cups chocolate jimmie sprinkles

Method
 

Preparation Steps
  1. Preheat oven to 300°F. Prepare three 8-inch cake pans with parchment paper and grease the sides.
  2. Mix dry ingredients in a large bowl: flour, sugar, cocoa powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, Kahlua, and vanilla to dry ingredients and blend well.
  4. Pour in hot coffee and mix until smooth. Batter will be thin.
  5. Divide batter evenly among prepared pans and bake for 32-35 minutes. Cool completely.
  6. To prepare the frosting, heat Kahlua to boil and add espresso powder. Stir until dissolved.
  7. Beat butter and shortening until smooth. Gradually add powdered sugar and Kahlua mixture, beating until fluffy.
  8. Level cakes and stack with frosting in between. Cover the outside of the cake with remaining frosting.
  9. Decorate the edge with chocolate sprinkles and pipe additional swirls on top.
  10. Store in an airtight container. Best enjoyed within 2-3 days.
