  • 2.5 cups elbow macaroni
  • 1 cup cheddar cheese, shredded
  • 0.5 cup mozzarella cheese, shredded
  • 0.75 cup milk
  • 2 tablespoons butter
  • 1 cup bread crumbs for coating
  • 2 large eggs
  • 1 teaspoon paprika

Preparation Steps
  1. Cook the macaroni in boiling salted water until al dente, then drain and set aside.
  2. In a saucepan, melt butter over medium heat, add milk, and stir in shredded cheeses until melted and smooth.
  3. Mix the cooked macaroni into the cheese sauce until well coated.
  4. Let the mixture cool slightly, then shape into small balls.
  5. Beat eggs in a bowl. Dip each cheese ball into the eggs, then coat with bread crumbs mixed with paprika.
  6. Heat oil in a deep fryer or large skillet to 350F. Fry the balls until golden brown, about 3-4 minutes.
  7. Remove from oil and drain on paper towels. Serve warm with your favorite dipping sauce.

Notes

For extra flavor, add cooked bacon bits or chopped herbs to the cheese mixture.
