  • 5.5 cups shredded sweetened coconut
  • 0.5 teaspoon salt
  • 14 oz sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract optional
  • 2 cups semi-sweet or dark chocolate chips about 12 ounces
  • 1 cup heavy whipping cream

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Spray a 10-inch tart pan with nonstick cooking spray. Place on a cookie sheet.
  2. Stir flour, coconut, and salt. Mix in condensed milk and extracts. Press into tart pan, pressing firmly.
  3. Bake for 20-25 minutes until golden brown. Cool completely.
  4. Heat heavy cream in microwave for about 2 minutes until bubbling. Add chocolate chips, let sit for 10-15 seconds, then whisk until smooth. Pour over cooled crust.
  5. Let the pie cool at room temperature until set. Serve and enjoy!

Optional garnish with toasted coconut flakes or chocolate shavings.
