  • 0.25 cup extra virgin olive oil
  • 3 cloves garlic
  • 2 cans cannellini beans 15 ounces each, rinsed and drained
  • 2 cups water
  • 1 tsp salt
  • 1 tablespoon lemon juice
  • 2 tsp red wine vinegar
  • 1 small shallot minced
  • 1 small red bell pepper diced
  • 1 small yellow bell pepper diced
  • 2 cups cherry tomatoes quartered
  • 3 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 0.25 teaspoon fresh ground black pepper

Method
 

Preparation Steps
  1. Heat 1 tablespoon olive oil in a saucepan set over medium heat.
  2. Add garlic and cook for 30 seconds until golden brown.
  3. Add beans and 2 cups water, season with salt, bring to a simmer, and cook for 15 minutes.
  4. Remove from heat, cover, and let stand for 15 minutes.
  5. Meanwhile, whisk together remaining olive oil, lemon juice, vinegar, and shallot in a large bowl. Let stand for 15 minutes.
  6. Drain beans and rinse with cold water. Add to the dressing.
  7. Stir in bell peppers, cherry tomatoes, basil, parsley, and black pepper.
  8. Gently toss to combine and let sit for 20 minutes before serving.
  9. Serve cold and enjoy!
