  • 1.25 cups milk
  • 1 tsp strawberry extract
  • 10 drops red food coloring
  • 2.5 oz bittersweet chocolate 60% cacao, chopped
  • 2 tbsp unsweetened cocoa powder
  • 560 g unsalted butter room temperature
  • 3.5 cups powdered sugar
  • 0.5 cup natural unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 5 tbsp heavy whipping cream
  • 0.25 cup strawberry puree
  • 2.5 cups unsalted butter room temperature
  • 10 cups powdered sugar
  • 2.5 tsp vanilla extract
  • 4 tbsp water
  • 3 oz semi sweet chocolate chips
  • 0.25 cup heavy whipping cream

Method
 

Preparation Steps
  1. Reduce 2 cups chopped strawberries into 1/4 cup of strawberry puree by cooking over medium heat until thickened, then cool.
  2. Prepare three 8-inch cake pans with parchment and grease. Preheat oven to 350°F.
  3. Mix dry ingredients: flour, baking powder, salt.
  4. Cream butter, oil, sugar, and 1.5 tbsp vanilla until fluffy, then add eggs one at a time, mixing well.
  5. Divide batter into three parts. Mix strawberry, vanilla, and chocolate recipes separately, incorporating respective flavorings and colorings.
  6. Bake layers for 23-28 minutes, then cool.
Make Frosting and Assemble
  1. Prepare vanilla, strawberry, and chocolate buttercreams by combining butter, powdered sugar, flavorings, and cream.
  2. Layer cakes with the respective frostings, assemble, and decorate with ganache and strawberries as desired.
