Preparation Steps
- Cook the orzo pasta in a large pot of salted water until al dente. Reserve 1/2 cup of pasta water and drain the pasta.
- Heat olive oil in a large skillet over medium heat. Saute the garlic until fragrant, about 1 minute.
- Add diced zucchini and cherry tomatoes to the skillet. Season with salt and pepper. Cook until vegetables are tender, about 3-4 minutes.
- Add the cooked orzo to the skillet. Stir to combine, adding reserved pasta water if necessary to loosen the mixture.
- Stir in the grated Parmesan cheese until melted and well combined.
Notes
This dish can be served as a side or a light main course. Feel free to add protein like grilled chicken or shrimp for a heartier meal.
