Preparation Steps
- Preheat the oven to 350°F. Grease and flour a bundt pan; set aside.
- In the bowl of a stand mixer, beat the butter until smooth.
- Gradually add sugar and beat until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- In a separate bowl, whisk together flour, salt, and baking soda.
- On low speed, alternately add flour mixture and sour cream to the creamed mixture, beginning and ending with flour.
- Gently fold in diced peaches.
- Pour batter into prepared pan, bake for approximately 1 hour and 10 minutes until a toothpick inserted comes out clean.
- Allow cake to cool for 15 minutes before removing from pan. Cool completely on a wire rack.
Notes
This peach cake is best enjoyed fresh and can be served with whipped cream or a dusting of powdered sugar.
