Method
 

Preparation Steps
  1. Heat olive oil in a skillet over medium heat, then add chicken breasts and cook until browned on both sides.
  2. Transfer the cooked chicken to the slow cooker and add bell peppers, green chiles, garlic, cumin, oregano, and chicken broth.
  3. Cover and cook on low for 4 hours until the chicken is tender.
  4. Remove chicken, shred with two forks, and return to the pot. Stir well.
  5. Serve hot garnished with fresh herbs and optional lime wedges.
