  • 1 lb asparagus
  • 2 tablespoons olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.5 cup grated parmesan
  • 1 tablespoon lemon zest

Preparation Steps
  1. Preheat oven to 425°F and prepare a baking sheet with nonstick spray.
  2. Snap off the woody ends of the asparagus. Drizzle with olive oil and toss to coat.
  3. Season the asparagus with salt and pepper, then toss again.
  4. Sprinkle half of the Parmesan and lemon zest over the asparagus and toss.
  5. Arrange the asparagus on the baking sheet in a single layer.
  6. Roast for 8 minutes, then sprinkle remaining Parmesan and lemon zest. Roast for an additional 2-4 minutes.
  7. Serve immediately with fresh lemon zest and cracked pepper.

Notes

For extra flavor, add a squeeze of fresh lemon juice before serving.
