  • 1 pound asparagus spears
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 8 slices bacon
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup shredded monterey jack cheese
  • 1 cup crumbled feta cheese

Preparation Steps
  1. Preheat the oven to 450°F. Line a baking sheet with aluminum foil. Toss the asparagus with olive oil, minced garlic, salt, and pepper. Spread on the prepared baking sheet.
  2. Roast the asparagus for about 10 to 12 minutes until crisp-tender.
  3. Meanwhile, cook the bacon until crispy. Drain on paper towels and crumble.
  4. Remove the asparagus from the oven. Sprinkle with shredded cheeses and crumbled bacon. Return to oven for 2-3 minutes until the cheese melts.
  5. Serve hot topped with additional feta if desired.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
