  • 5 links mild Italian sausage casing removed
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 0.5 tbsp dried basil
  • 2 cups white mushrooms sliced
  • 1 can diced tomatoes 28oz can
  • 0.5 can tomato paste 5.5oz can
  • 0.25 tsp pepper
  • 3 cups baby spinach roughly chopped
  • 6 oz spaghetti
  • 1 tbsp unsalted butter
  • 0.25 cup all-purpose flour
  • 1.5 cups milk
  • 1.5 cups mozzarella cheese shredded, divided
  • 0.125 tsp salt
  • 0.25 cup Parmesan cheese shredded

Method
 

Preparation Steps
  1. Preheat the oven to 375°F.
  2. Cook sausage in a large pan over medium-high heat until no longer pink. Stir often to crumble the sausage.
  3. Add chopped onion, garlic, and dried basil and stir to combine. Cook for 5 minutes.
  4. Add sliced mushrooms and cook for another 5 minutes.
  5. Stir in diced tomatoes, tomato paste, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add spinach, stir, and remove from heat.
  7. In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  8. Gradually whisk in milk and cook until thickened. Stir in 1 cup mozzarella and a pinch of salt.
  9. Cook spaghetti until al dente, then drain and combine with meat sauce.
  10. Spread the mixture in a 9x13 inch casserole dish. Pour cheese sauce on top, then sprinkle remaining mozzarella and Parmesan cheese.
  11. Bake for 30 minutes or until the top is golden brown. Serve hot.
