Preparation Steps
- Wash the red bell peppers, slice off the tops, and remove the seeds. Place them upright in a baking dish.
- In a large skillet, cook the ground turkey until browned. Drain excess fat. Add cumin, salt, crushed tomatoes, black beans, and corn. Simmer for 15 minutes.
- Meanwhile, cook the jasmine rice according to package instructions.
- Stir cooked rice into the skillet mixture. Remove from heat. Stuff each pepper with the mixture, then cover with foil and bake at 350°F for 40-45 minutes.
- Remove foil, top with cheese, and bake an additional 5 minutes until cheese melts. Garnish with sliced green onions.
- Serve hot and enjoy!
Notes
For a Vegetarian option, omit the turkey and add more vegetables or beans.
