  • 1 pound ground beef
  • 1.5 cups cooked rice
  • 1 cup diced tomatoes
  • 0.5 cup shredded cheese cheddar or Mexican blend
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.25 teaspoon black pepper
  • 6 whole bell peppers red, green, or yellow

Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C). Slice tops off the bell peppers and remove seeds.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 8 minutes.
  3. Add diced tomatoes, cumin, paprika, and black pepper to the skillet. Stir and cook for another 5 minutes.
  4. Mix in cooked rice and half of the shredded cheese into the beef mixture. Stir well.
  5. Stuff the mixture into the hollowed bell peppers and place in a baking dish.
  6. Top each stuffed pepper with the remaining cheese.
  7. Bake in the preheated oven for 35-45 minutes until peppers are tender and cheese is melted and bubbly.
  8. Serve hot, garnished with chopped green onions if desired.

Notes

Feel free to add your favorite spices or herbs for extra flavor. Vegetarian versions can replace ground beef with lentils or beans.
