  • 4 large sweet potatoes
  • 1 cup black beans rinsed and drained
  • 0.5 cup corn fresh or frozen
  • 1 cup shredded chicken
  • 0.5 cup shredded cheese cheddar or cheese of choice

Method
 

Preparation Steps
  1. Preheat the oven to 400°F. Pierce the sweet potatoes several times with a fork and bake for 45 minutes or until tender.
  2. Slice the baked sweet potatoes lengthwise and scoop out some of the flesh into a bowl.
  3. Mix the sweet potato flesh with black beans, corn, shredded chicken, and cheese.
  4. Stuff the mixture back into the sweet potato skins and place on a baking sheet.
  5. Bake the stuffed sweet potatoes for an additional 20 minutes until heated through and cheese is melted.
  6. Serve warm garnished with fresh herbs if desired.
