Preparation Steps
- Preheat oven to 375 degrees F. Spray a 13x9-inch baking dish with non-stick cooking spray.
- Heat olive oil in a large skillet over medium-high heat. Add chopped onion and bell pepper; sauté for 4 minutes.
- Add ground beef, season with salt and pepper, cook until browned, then drain excess fat.
- Stir in garlic, chili powder, and cumin; cook for 1 minute.
- Add black beans, tomatoes, corn, water, lime juice, and cilantro; simmer for 5 minutes.
- Layer half the tortilla halves on the bottom of the baking dish.
- Spread half of the beef mixture over the tortillas.
- Sprinkle with half of the cheese blend.
- Repeat layering with remaining tortillas, beef mixture, and cheese.
- Bake uncovered for 20 minutes, until bubbling and cheese is melted.
- Garnish with additional cilantro if desired. Serve warm.
Notes
Can be topped with sour cream, diced tomatoes, or avocado for extra flavor.
