  • 3 cups cooked shredded chicken
  • 1 head green cabbage shredded
  • 2 cups carrots grated
  • 1 cup fresh cilantro
  • 0.5 cup peanuts chopped
  • 0.5 cup green onions sliced
  • 0.5 cup lime juice
  • 0.25 cup peanut butter
  • 0.33 cup low sodium soy sauce
  • 0.33 cup sesame oil toasted or dark
  • 0.25 cup rice vinegar
  • 2 Tbsp sambal oelek or sriracha
  • 2 Tbsp sugar
  • 1 small knob fresh ginger peeled
  • 1 clove garlic peeled
  • 0.25 cup water to thin to desired consistency

Method
 

Preparation Steps
  1. Chop all vegetables and herbs, then combine shredded chicken, cabbage, carrots, cilantro, green onions, and peanuts in a large bowl. Prepare the dressing by blending peanut butter, lime juice, soy sauce, sesame oil, rice vinegar, sambal oelek, sugar, ginger, garlic, and water until smooth. Toss the salad with the dressing and serve immediately or chilled.

Notes

Adjust spice level by adding more sriracha or sambal oelek. Serve with lime wedges for extra tang.
