  • 0.5 cup vegetable oil
  • 1.5 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1.5 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 3 cups finely shredded zucchini (DO NOT DRAIN)
  • 1.25 cups semi-sweet chocolate chunks

Method
 

Preparation Steps
  1. Preheat oven to 350°F and prepare a 9x13 pan with butter or baking spray, lining with parchment paper.
  2. In a large bowl, combine oil, sugar, and vanilla until fully incorporated.
  3. Add flour, cocoa powder, baking soda, and salt. Mix until combined. Batter will be very dry.
  4. Fold in shredded zucchini by hand. Allow batter to rest for 5 minutes.
  5. Add chocolate chunks and stir again. Batter should be moist; if not, let rest for 5 minutes and stir again.
  6. Spread the brownie batter into the prepared pan and bake for 25-35 minutes. Insert a toothpick; if it comes out with crumbs and no wet batter, brownies are done.
